Chicken Tomato Spinach Zuchinni Boat Recipe 

Good morning lovelies! 

Im excited to share with you guys a little recipe I whipped up last night for dinner! Its quick, easy as hell and cheap! Added bonus- my husband and daughter even loved it! Totally filling.. totally satisfying.. Totally healthy. I think you can see why I would be so excited to share 😊 

Cooking healthy has been tricky for me on a few levels.. my lack of effective time management has led me to eat quite simply throughout my weightloss journey. I eat a lot of lean protiens and my weekly meal prep usually consists of things like grilled chicken, raw and baked veggies, lean turkey and hardboiled eggs. For the most part, this hasn’t bothered me at all and I actually love how the food I eat makes me feel. I have regularly scheduled “cheat meals” and at least one USANA whey base protien shake a day and I find both help me curb those otherwise daily cravings! 

But –

Some days you just need to add a little “oomph” to your diet and let me say.. this recipe did the trick for my whole family! 

Heres what I used:

  • 2 baked chicken breast, shredded 
  • 1 cup shredded mozarella cheese 
  • 2 zuchinni  ( go for wider, flat zuchinni )
  • 1 can (14.5 oz) Hunts diced basil, garlic and oregano tomatoes 
  • About 2 cups Baby spinach

Thats all you need! 

Preheat oven to 400°. 

Cut zuchinni in half and use spoon to hollow out the middle to create our zuchinni “boat”

Drain can of diced tomatoes and combine with chopped spinach and already cooked, shredded chicken breast in skillet on low heat to combine flavors. 

Next is the fun part… stuff em 😏

You’ll want to load those babies up! 

I used a small square pan and found it helped having the sides to the pan so my zuchinni werent rolling around or tipping. The wider zucchini you get, the better! 

Pop em in to that preheated oven and let em go for 25 minutes☺ 

After 25 minutes, remove zuchinni boats from oven to sprinkle mozarella and place back into the over for an additional 5 minutes, or until cheese is melted. 

I also added fresh black pepper and Himalayan pink sea salt. 

Easy.. healthy.. cheap.. YUM.
