The Best One Pan Veggie/Chicken Bake I’ve EVER Had.

unnamedI don’t mind meal prep itself, but the hurricane that sweeps through my kitchen and piles into my sink.. that I could do without! This recipe has the best combination of flavors and the brownie points it gets for dirtying only FOUR dishes is off the charts. Chopping your veggies is honestly the hardest part. As if that hadn’t sold you already, I’ve made this countless times using a variation of whatever fresh veggies I have in the house and believe me, they’re all good! Get creative however you’d like although I believe the dried cranberries, onion and olive oil make the dish and would be sure to include those. 🙂

Prep Time: 20 min

Cook time: 45 min

You will need:

  • Large sheet pan
  • Tinfoil
  • Cutting board
  • Sharp knife
  • Spatula
  • Oven


  • 10-12 Large brussel sprouts, halved
  • 2 Sweet potatoes, peeled and cut into 1/4″ cubes
  • 1 Large yellow onion, chopped into larger pieces is okay
  • 1/2 cup Reduced sugar dried cranberries
  • 2 cups broccoli florets
  • 1 tablespoon Minced garlic
  • 1 1/2 lb cubed chicken breast
  • Olive oil
  •  Additional seasonings to taste, I use salt and pepper


  1.  Preheat oven to 375 degrees
  2. Place large piece of tinfoil over pan
  3. Combine brussel sprouts, sweet potatoes, onion and broccoli and spread evenly in pan
  4. Sprinkle dried cranberries evenly throughout
  5. Drizzle minced garlic evenly throughout
  6. Drizzle olive oil over all of the combined ingredients
  7. Season to taste ( I use salt, pepper and lightly sprinkle red pepper flakes)
  8. Cover pan completely with tinfoil
  9. Bake 10 min, covered
  10. Remove from oven, toss ingredients, cover again and place back into the oven for an additional 10 min
  11. Remove from oven, toss ingredients, add raw cubed chicken evenly throughout, cover and place back into the oven
  12. Bake until chicken and sweet potatoes are cooked through, typically about 15 min depending on size
